On Oct. 20th, when people were arrested at Citibank, people also closed their Chase bank accounts, but were not arrested: http://redgreenandblue.org/2011/10/17/occupy-wall-street-citibank-was-stupid-chase-bank-was-smart/.
I don't think banks will perform arrests for publicity reasons.
Nonetheless, to minimize risk I think it could be important to not determine a bank location until just before group(s) go to close their accounts:

So either the Washington Square Park police were able to find out and radio ahead to plainclothes detectives which locations to situate themselves in, or the Occupy Wall Street movement has a couple of NYPD detectives moving inside of their ranks already. Or, Option C, as presented in the blog Red Green and Blue: the kids that were planning the runs on the bank just talked too much about it on social networks.
To emphasize, I don't think there is a large risk of arrest or 'police infiltration', but to stay organized and on task, I think we should determine a time to meet at Jackson and Lasalle, and then decide which bank location(s) to go to.

I will wear a green suit and will ask around at Jackson and Lasalle if anyone else wants to go to a Chase bank to close their account on the agreed time on Saturday morning.
